Thought I should share this recipe since it is one of my favorites. I could eat sweet potatoes every day!!
2 large sweet potatoes, peeled, sliced thin
2 large cloves garlic, minced
3 Tbs. olive oil
2-3 Tbs. fresh thyme, chopped
2 tsp. (or more if you like it spicy!) red pepper flakes
Dash of salt
Toss all ingredients together, place on baking sheet and bake at 375° for 45 minutes or until tender(I like to leave them in a little longer until they are extra crispy).
This recipe is also great when grilled. Just use a grill wok or grill veggie basket – they turn out crispy and delicious!
